125gm butter, ½ cup golden syrup, 1/3 brown sugar. Melt together and stir. Sift 3 cups plain flour, 1 teaspoon cinnamon, 1 teaspoon ground ginger, 2 teaspoons bicarbonate of soda. Add mixtures together and then add 1 lightly beaten egg and 1 teaspoon vanilla essence. Press together and chill for 10 minutes. Knead on a floured board and roll to 5 mm thick. Cut to desired shapes. Bake for 10 minutes at 180 degrees Celsius. When cold assemble and decorate.
